Why is the seat so high on a road bike?

I have a cruiser/mountain bike hybrid. I would get a road bike but I hate having to get off the seat in order to put my feet down on the ground which I need to do often since I'm in the city with all of the stoplights. What is the benefit of having your butt up so high? Is it just because you are more streamlined? Are there other benefits?
