Can I change the neck and handle bars on a giant mountain bike?

I bought Giant mountain bike 8 or 9 years ago from the local bike shop. I've stopped riding trails (for now) and would like more of the upright position that cruiser or hybrid bikes offer. Hey - I'm getting older!
